Dawn publishes recipes for homemade chicken and vegan sausages
In Pakistan, Dawn has published two recipes for homemade sausages — one made with minced chicken and a vegan option based on white beans. Both recipes use affordable ingredients, and the finished products can be frozen.
Sausages made with minced chicken
For the chicken version, you need one kilogram of minced chicken, boiled grated beetroot, half a grated carrot, garlic, a chicken stock cube, ground chilli pepper, onion powder, black pepper, salt, tomato paste and crumbled bread.
The ingredients should be mixed and processed in a food processor until they form a smooth paste. The mixture is recommended to be shaped with a piping bag onto sheets of parchment paper, with each portion wrapped and chilled for four to five hours. The wrapping must be removed before boiling. The sausages are then boiled in water for four to five minutes and fried in oil until golden. They are suggested to be served in hot dog buns with ketchup and mustard.

Vegan bean option
For vegan sausages, one cup of white beans should be soaked overnight and then boiled in four cups of water until the water evaporates. The cooled beans are blended with onion, garlic, oat flour, salt, garlic powder, chilli flakes, ground pepper, fennel, cumin, walnuts, tomato paste and soy sauce.
Chia seeds, previously soaked in water, are also added to the mixture. After processing, the mixture is shaped by hand greased with olive oil, wrapped in foil and steamed for 20 minutes. Some of the finished vegan sausages can be served immediately, while the rest can be frozen.
